Tacna, Peru is the largest producer of olives in the country, covering 81.4% of the total area dedicated to the crop. The region produces around 122,731 tons of olives annually, with half of the land currently in production and the rest still growing. The national olive production reached 189,065 tons in 2019, with Tacna's production accounting for a significant portion. The main variety grown is the criolla, with a portion destined for table olives and the rest for oil. The industry has seen growth with the increase in production, but a decrease in price has led more to be processed into oil. Exports of table olives and olive oil have varied, with a decrease in olive oil exports in 2020. The Creole variety, while great for oil, is not suitable for slicing for dishes due to its asymmetry.
