In the village of Ütük in the district of Zara, Sivas, Enes Dursun Yılmaz, who has been growing dry beans using traditional methods for 10 years, is challenging modern methods. Inspired by the positive effects of natural production on human health and believing that flavor lies in naturalness, Yılmaz sorts his produced dry beans by size using a machine he produced himself, after separating them from the chaff using a century-old, old-fashioned winnowing machine. Producing and harvesting sugar-type couscous beans without any chemicals and using natural production techniques, Yılmaz dries them in the open and then sorts them by size and packs them using an electric sorting machine he made, which he previously operated manually with a lever and later supported with a system added to a bicycle wheel, making the beans ready for consumption.
