The Ministry of Agriculture, Water and Rural Development of Castilla-La Mancha is launching a regional school for shepherds this spring to ensure the continued commitment of extensive farmers to the Manchega sheep, a key factor in the production of Manchego cheese. 2021 saw a record 17.1 million kilograms of Manchego cheese produced, a significant increase from the Denomination of Origin's humble beginnings. Two thirds of this production is exported, with the United States being the largest market. The Denomination of Origin 'Queso Manchego' has allocated 900,000 euros for the promotion of its products for the current year.
