A new standard, "Liquor Quality Requirements Part 1: Luzhou-flavor Liquor" (GB/T10781.1-2021), has been implemented in China, replacing the previous standard from 2006. This standard aims to unify the style of Luzhou-flavor liquor by providing a clear definition, regulating brewing methods, and specifying the alcohol range and sensory requirements. It also introduces the concept of 'total acid ester' to address issues of ester hydrolysis in storage. The standard also increases labeling requirements for prepackaged products and offers a scientific reference for the collection of old wines. The changes are expected to benefit mid-to-high-end solid-state liquor products and provide a more understanding of the flavor and brewing concept of liquor for consumers.
