In the first two months of 2024, Russia saw significant caviar production across various regions. The Vologda region led in sturgeon caviar production with 44 businesses producing 20,794 kg. Imitation sturgeon caviar was mainly produced in St. Petersburg, totaling 36,346 kg. The Republic of Karelia was the leading producer of salmon caviar with 158,612 kg, while structured salmon caviar was primarily produced in the Nizhny Novgorod region, totaling 70,148 kg. The Leningrad region produced the most imitated salmon caviar, with a total of 148,219 kg.
