The total production volume of sturgeon caviar was 20,794 kg. The largest volume was produced at enterprises in the Vologda region - 6,955 kg. The production of imitation sturgeon caviar was carried out by 3 business entities, which produced 36,346 kg. The main volume of this caviar was produced in St. Petersburg - 15,598 kg. During the specified period, 158,612 kg of salmon caviar were produced. The production of salmon caviar was carried out by 55 business entities. The largest volume was produced in the Republic of Karelia - 129,027 kg. During the specified period, 70,148 kg of structured salmon caviar were produced.
