The Regulatory Council of the Torta del Casar Protected Designation of Origin certified over 322,000 kilograms of cheese in 2021, marking a 10% increase from the previous year with a turnover of 7.9 million euros. The total milk production also rose, along with the volume transformed in dairies. The certification index in 2021 was 88.2%, and the majority of sales were in Spain, with a slight increase in exports, primarily to Europe. The format of sales saw a change with more units sold in formats less than 500 grams, despite a decrease in those between 500 and 900 grams. The president of the Regulatory Council is working to further improve milk production and quality control.
