In 2023, Peru's potato production reached 5,428,723 tons, with Huánuco, Ayacucho, Puno, and La Libertad being the main regions. The country is working to promote potato consumption, which has nearly doubled from 20 years ago, and has designated May 30 as National Potato Day for the twentieth year (and now International Potato Day by the UN). Peru is the largest potato producer in Latin America and the third in America, expecting to become the second with an expected production of over 6 million tons.
