The production of salmon caviar in Russia over 11 months increased by 18%.

The production of sturgeon caviar increased by 11%. The production of natural salmon caviar in Russia from January to November 2025 amounted to 12.1 thousand tons. This is 18% higher than the figure for the same period in 2024, when 9.9 thousand tons were produced, reported in Rosselkhoznadzor with reference to data from the FGIE "VetIS". The positive trend is also noted in the sturgeon caviar segment: production increased by 11%, to 88 tons. The department also noted that amid the growth in the production of natural caviar, the production of its analogues continues to decline. Thus, the production of red imitation caviar decreased by 53%, from 615 to 279 tons, and red structured caviar by 27%, from 534 to 385 tons. The production of black imitation caviar also decreased by 5%: it amounted to 166 tons against 174 tons a year earlier.
