The Central Highlands in Vietnam is renowned for its unique culinary delicacy, the caterpillar pupa dish, available only during the cassia worm season in March and April. The caterpillar pupae, larvae of the worm species on the cassia tree, are consumed live with chili sauce or salt and pepper, or cooked in various ways. The dish is characterized by a fatty, sweet taste that melts in the mouth. Initially a local specialty, the caterpillar pupae are now distributed to various places, including Hanoi, where they retail for about 170,000 VND/kg.
