During the coronavirus pandemic, there has been a noticeable increase in the demand for natural products such as pepper, thyme, mint, sumac, pomegranate syrup, tomato paste, ginger, and cinnamon, prepared traditionally from the historical Almacı Pazarı bazaar. This surge is attributed to people seeking to boost their immune systems against both the COVID-19 infection and seasonal diseases. Notable herbs like linden, ginger, marshmallow flower, zahter, and cinnamon have experienced a significant price hike, with ginger's price tripling and linden's price reaching 200 liras per kilogram. This price escalation is primarily due to increased demand and the impact of rising foreign exchange rates. As winter approaches, tradespeople expect demand for these herbal products to rise further.
