The National Institute of Meats (INAC) has as one of its main tasks the promotion of meat protein to the world, in the particular case of sheep meat, work is also done in conjunction with the National Institute of Vitiviniculture, promoting lamb meat and wines together. The president of INAC, Gastón Scayola, recalled that the sheep sector has been in a steep decline for almost three decades – after the fall of the wool boom – “In 1996 Uruguay started, following New Zealand’s experience, to work on the concept of heavy lamb, with which some meat industry companies took the lead, but this did not prevent the sector from continuing to decline.” To put a stop to this steep decline, “two or three fronts need to be resolved” according to Scayola, who further explained that “we need to work together across the entire agricultural and livestock institutionality and in a coordinated manner, this includes Sul, Inia, INAC, and the Agricultural Plan.
