When in 2024 Bichos de Campo spoke with the members of CHARCA (Charcutería y Artes Cárnicas), a group of 30 artisanal sausage producers from Buenos Aires who came together to provide a legal framework for their craft, the dilemma was clear: to build a regulatory structure, it was necessary to update the current regulations. "While the production of a candy or a jam is regulated by legislation for small producers, there is no regulation for the small-scale production of meat products. One is aware of good manufacturing practices and does things right, but still needs a controller, a state that ensures I actually do things right," explained a sausage maker from the group at that time. After three years of work alongside the Ministry of Agrarian Development (MDA) of the province and the College of Veterinarians, in August 2025 the producers achieved their first victory.
