Whoever visits the Campo Salse establishment, in the Buenos Aires town of Cañuelas, should not worry if they see a flock of sheep grazing among long rows of strawberries. Far from being animals that "jumped" the fence, their presence there is key to the regenerative and organic management that they have been carrying out for several seasons, and which has already yielded very striking results. Leading this initiative and replicating it in other horticultural fields in the province is agronomist Gonzalo Sánchez Correa, who in 2017 founded the "Sembrando Consciencia" community with several producers and in 2020 joined the Italian Slow Food movement, whose goal is to produce food responsibly.
