In Aydın, where the most and highest quality artichokes in Turkey are produced, the producer is concerned about the inability to claim and process the artichokes, similar to chestnuts. Artichokes produced in Aydın on an area of approximately 5,000 acres are bought from the Aydın producer for 8-10 TL each, while processed and jarred artichokes in other provinces, especially Bursa, are sold to consumers for between 40 TL and 60 TL. Mehmet Karagöz, the neighborhood head of Efeler Gölhisar, where artichoke production is most intense, stated that industrialization of artichokes must be initiated immediately to prevent Aydın artichokes from falling into the same situation as chestnuts.
