The 2020 edition of the 'Brasil Artesanal Award' is set to boost Brazilian charcuterie, particularly salami production. Initiated by the CNA / Senar System and the Charcuterie Academy, the award aims to recognize the nation's top sausage producers. Farmers must register by October 30, 2020, for the Artisanal and Traditional Food Program. Product samples, to be evaluated based on factors like maturation point, texture, creativity, and fat level, among others, must be submitted by November 6. The final five products, selected based on their ranking, will compete in the final stage, with a jury of national specialists overseeing the evaluation process.
