Burrata and stracciatella cheeses, originating from Italy, have experienced a significant surge in growth in both the domestic and international markets. The cheese industry has witnessed a remarkable increase in demand, with burrata and stracciatella contributing to a quarter of the value of production in exports, amounting to over 406 million euros. These cheeses have found favor in restaurants and pizzerias, particularly abroad, and have shown impressive growth in retail sales, with burrata reaching a value of nearly 80 million euros and stracciatella approaching 43 million euros. The industry has seen a steady increase in production, with a 15% growth in volume and over 30% increase in exports in the 2018-2022 period, driven by innovations and investments in the sector.
