In Düzce, freshwater crayfish, also known as the freshwater lobster, are now available for sale, with prices ranging from 30 liras per kilo for regular buyers to 500 liras for luxury restaurant purchases. Last year, Turkey imported 800 tons of this seafood, both for local consumption and export. The crayfish is praised for its health benefits and is a staple in many luxury restaurants, both in Turkey and internationally.
