Duckweed, a protein-rich and fast-growing plant, has been approved as a vegetable in Europe, with the potential to significantly change global food practices. Originating from Thailand and other Asian countries, it is valued for its quick growth, suitability for indoor cultivation, and high protein content. Duckweed is also sustainable as it grows in water and requires few nutrients, making it an ideal vegetable for urban farming. It produces more protein per hectare than soybeans and is rich in vitamins, minerals, and antioxidants. Despite not being widely consumed in the West, efforts are being made to incorporate it into plant-based diets, with ongoing research on its extraction for protein in the US and its sale as green caviar in Israel.
