This shift is in response to the increased demand and price of thyme, which has gained more popularity during the coronavirus pandemic due to its believed health benefits. As a result, the planting area for thyme in Denizli is expanding, with farmers finding it easier to grow and harvest compared to grapes, and with the added benefit of it being pest and disease-free. Additionally, thyme is more profitable and has a stronger market presence. Denizli contributes significantly to Turkey's thyme production, accounting for about 89% of the country's supply.
