What began as the most humble of roadside stalls selling offal has become an extremely successful vertically-integrated family beef operation that has made the Philippines a key customer of Australian live cattle. Not only does RSRH Livestock Corporation run feedlots, an abattoir and a trucking company, supplying fresh, chilled and frozen carcases and primal cuts to markets, retailers, restaurants and large food companies in Manila, it runs five of its own steakhouses with beef shops attached. And it is underpinning its growth on the eating quality science that comes hand-in-hand with sourcing Australian cattle. Brothers Raymond and Richard Hernandez have become social media superstars by telling their story of low-stress cattle handling, tenderstretching, pH monitoring, vacuum packing and high animal welfare processing.
