The dried vegetable market in Ukraine is heavily dependent on supplies from abroad. Dried cabbage, beets, carrots, onions, garlic are actively imported to our country. This is evidenced by the results of research on the market of dried vegetables in Ukraine by Pro-Consulting for the period 2018 - 1 half of 2021. As noted, companies that makeup and put on sale sets of spices and seasonings for dishes are mainly engaged in their own production of such products. According to the study, 457 domestic companies are registered in Ukraine, supplying products to the dried vegetable market in Ukraine. Dried onions and carrots are produced by 17 enterprises. Most of the Ukrainian producers were recorded in the segment of dried peas, followed by dried mushrooms. “In the entire volume of the dried vegetable market in Ukraine, the share of imported products is 58.3%, in the segment of dried onions its size is much larger - 86.4%,” experts say. Import supplies to the market of dried vegetables in Ukraine are carried out from southern countries - China, India, Iran, Turkey, Uzbekistan.
