The Stavropol Territory in Russia is a major contributor to the country's protected ground vegetable production, accounting for 27% of the total regional vegetable crop production. The region has seen a significant increase in the gross harvest of protected ground vegetables, which quadrupled since 2015 and reached 94 thousand tons in 2020. The Stavropol Territory is a leading producer of tomatoes in greenhouses, accounting for over 14% of Russia's production. In 2020, the region produced 70 thousand tons of tomatoes. The region also produces a variety of other vegetables including cucumbers, salad crops, sweet peppers, and eggplant. The importance of Stavropol vegetables in the country's food basket is demonstrated by the production volume of 80 thousand tons in 2019, which was the fourth largest in the country. The region's greenhouse complexes allow for calibration, packaging, and direct selling through retail chains, providing year-round production of fresh vegetables.
