Spain's olive oil harvest is projected to rebound to average production levels for the 2024-2025 season, with an estimated output of 1,262,300 tons, representing a 48% increase from the previous year and 4% above the six-year average. This improvement follows two years of low yields and is largely due to favorable spring rains that enhanced flowering and setting. The final production figures will depend on future weather conditions, particularly in dry olive groves. Andalusia, the largest olive oil producer, is expected to see a 77% increase, accounting for 81% of the national total, while Castilla-La Mancha is anticipated to produce 140,000 tons, marking a 29% rise from the previous year.
