To ensure the future of Manchego sheep farmers, a Strategic Plan will be launched, and a School of Shepherds will be initiated to facilitate generational change. With Manchego cheese leading the agri-food sector, which accounts for 17% of the Autonomous Community's wealth, the region will prioritize projects involving the native breed and increase training courses. The cheese is consumed and exported widely, with the United States as the primary market.
