In 2021, Ukraine saw a rise in mushroom production to 70 thousand tons, despite a decrease in price by 20% adjusted for inflation from 2017-2020. The average selling price of mushrooms increased by 12% in 2020, but inflations were around 40% during the same period. The price fluctuations are due to the market situation, with the minimum and maximum prices differing almost threefold since 2020, according to Maksym Yenchenko, the director of the UMDIS information mushroom agency.
