The Nizhny Novgorod region in Russia has opened commercial fishing for crayfish for the first time, with an auction for the distribution of quotas in the Cheboksary reservoir. The All-Russian Research Institute of Fisheries and Oceanography has estimated the crayfish stocks at 4,350 tons for industrial fishing in 2022. The fishing rules have restrictions on the fishing period and the size of the crayfish to be used for production. Crayfish, a delicacy rich in protein, vitamins, and minerals, is in steady demand for both processed and live forms in the market.
