The offal of Argentine meat – tripe, stomach, sweetbreads, tongue, liver, heart, brain, and tail, among others – is part of a sector that, although consumed locally, has an export market yet to be exploited. This involves China, a well-known market giant. In dialogue with AIRE Agro, Georges Breitschmitt, president of the Argentine Beef Promotion Institute (IPCVA), maintained that offal is not as deeply rooted in local consumption as the traditional barbecue, but does have great demand in other countries. "Once the animal is slaughtered, all the offal has a consumption that is not as widespread as barbecue. Everything is eaten, but in Argentina we are not so accustomed to eating those things," Breitschmitt explained. These offal products, with low consumption in Argentina, are mainly destined for countries in Asia and Africa.
