Despite a 10-15% decrease in production, the market is supplied and sales are similar to the previous year. It takes three and a half years to produce an oyster, and while producers are trying to reduce costs, a price increase was necessary, bringing prices back to levels from 2010-2012. However, Laurent Chiron, president of the IGP movement for oysters in Marennes-Oléron, emphasizes that oysters remain an affordable product.
