In Nevşehir, Turkey, seed potatoes are stored in natural cold storages carved into unique tuff rocks to prevent rotting. These storages, which meet about 65% of the country's potato needs until the new harvest, are home to 1321 licensed underground warehouses. The seeds are stored in these warehouses during autumn and can stay for months without rotting, molding, or freckling due to the ideal humidity and heat conditions. After preservation, the seeds are sorted and shipped for planting in the new season.
