In Ukraine, palyanytsia has almost disappeared from supermarket shelves due to a loss of consumer demand. This was reported by Alexander Taranenko, head of the All-Ukrainian Bakers Association (VAP), in an interview with Interfax-Ukraine agency. "Previously, we baked a standard palyanytsia weighing 1.5 kg. But now, no one buys bread of this weight. Demand has changed, and it generates supply. When the Ministry of Health initiates reducing salt content in bread, we listen and produce it with reduced salt, but it is not popular. This is how new types of bread with various additives and properties have replaced palyanytsia on the shelves," Taranenko noted. The specialist acknowledged that if palyanytsia is baked in Ukraine, it is not in mass demand. Taranenko explained that a new generation is growing up, and their preferences are leading to changes in the assortment.
