The wheat market in the South of the country continues to be influenced by the progress of the harvest, the pace of sales, and the fluctuation in the quality of the grains, factors that determine prices and the direction of production between industry and export. According to TF Agroeconômica, the scenario in Rio Grande do Sul remains marked by strong heterogeneity, with good pH and FN indices, but limitations in gluten, W, and stability, which reduces the use in industrial flours and frozen products.
