Belarus has seen a significant increase in the processing of whey, rising from 8% of 1 million tons in 2004 to 97.7% of 3 million tons in 2020. This growth is attributed to a long-standing program aimed at improving whey processing, driven by a rise in milk production and a need for cheese. Despite reaching high processing volumes, the technology used for whey processing remains rudimentary, with the country yet to explore advanced techniques like membrane technologies, hydrolysis, and isolation of specific protein groups. The industry also faces challenges in staff training and retraining.
