Description
Nuevo Manantial offers Extra Virgin Olive Oil that is a “living” product that doesn’t expire and is always edible. However, since it is a 100% natural product it evolves over time and its flavor and properties can be diminished, Light exposure must be minimized or eliminated at all times since prolonged exposure can deteriorate the quality and quantity of the antioxidants in olive oil. The exposure to high temperatures develops unpleasant flavors in the olive oil and it should be kept away from the kitchen, oven, microwave, or any heat source. The optimal storage temperature is 16°C to 22°C. The oil is stored in stainless steel tanks until its automatically bottled in glass bottles in the company warehouse facility. At the time of shipping, the olive oil is bottled in 500 ml glass bottles. The consignment gets ready for shipment within 4 weeks (with customized packaging service) and in 2 weeks (without customized packaging service). The main port used for export is the Montevideo port.

Description
Nuevo Manantial SA has an average annual production of 1,000 MT of extra virgin olive oils. The harvest period is from March to May, in Rocha Uruguay region, in a production area of 2,700 ha. The Olivares de Rocha is an Extra Virgin Olive Oil or an EVOO in which the liquid of the olive is extracted by cold pressing extraction methods and it followed by filtering. The Alfa Laval producing machines are used in the process. Since the olives are harvested during the day, the fruit undergoes less oxidation. No solvents or chemical additives are used for this process. Irrigation is done by dripping, providing more efficient use of water. In the plant, there is a wind farm that produces renewable energy, making energy production self-sustainable. The production process is conventional and Non-GMO. The whole process involves around 50 people.
