The Consortium for the protection of Asiago DOP cheese in 2020 reported a rise in consumption, value, and production. Despite challenges, domestic purchases rose by 7% and sales related to delivery increased by 160%, while e-commerce sales grew by 39%. The production saw an increase, with Fresh forming 1,427,456 and Seasoned forming 306,241. Long aging, appreciated by consumers, is a distinctive feature of the new production disciplinary. The consortium aims to further enhance and protect the quality and distinctive aspects of the Asiago cheese in 2021.
