In Ukraine, over a quarter of dairy products like butter, cheese, sour cream, and ice cream are adulterated by substituting milk fat with cheaper fats such as vegetable, beef, or chicken fat. This practice is common in exports to low-income markets in Africa and Asia, with some products being mislabeled to deceive consumers. This issue is not unique to Ukraine, as European producers also engage in similar practices for exports to Asia, Africa, and the Middle East. The falsification is partly due to a shortage of milk and meat in Ukraine, which has led to higher milk prices.
