INTEROVIC, the Agro-food Interprofessional of Sheep and Goats, returns once more to the Salón de Gourmets with a clear objective: to demonstrate that lamb has a place on the table any day, without the need to celebrate a special occasion. For this 39th edition, the Interprofessional has gathered at its stand four of the chefs who best embody the new Madrid cuisine, with proposals that reinterpret the Paquito, the lamb sandwich with its own name that INTEROVIC has turned into a banner of a different way of consuming ovine: closer, more informal, and more contemporary. From Monday to Thursday, the INTEROVIC stand (Pavilion 6 stand F15) will host a different showcooking each day, with two sessions—at 12 p.m. and 1:30 p.m.—in which the chefs will prepare and offer their own version of the Paquito to the fair audience.
