Italy, the world's second-largest producer after China, stands out for its quality and sustainability. In 2022, Italian producers, including Agroittica Lombarda which owns the Calvisius brand, produced 62 tons compared to over 600 tons worldwide. Agroittica's 2022 turnover rose from 34 million to 42 million, despite a consumption crisis in smoked meats.
