Farmers in western Ukraine are shifting their focus from growing vegetables for borscht to cultivating medicinal herbs, such as elderberry, valerian, nettle, plantain, and sage, due to promising long-term profits. These herbs are used in the pharmacy, cosmetology, and food industries. Despite the challenges of quality control and the need for certification for international markets, especially for 'Organic' products, the global herb market is on the rise, with demand from countries like the USA, Japan, China, India, and EU nations. Prices for herbs have increased, with Arnica being the most expensive due to its anti-cancer properties and specific growth requirements. The war has led to a shift towards herb cultivation for export, with potential benefits for Ukrainian producers.
