Responsible for around 90% of the national production, the municipality of Piedade, in the interior of São Paulo, has established itself as the main hub for artichokes in Brazil. Harvested before the flower fully opens, when the petals still envelop the heart of the plant, the artichoke is used in cooking and forms the basis of Paulista agriculture. “There are few producers, but they are very important for Brazil. Our artichoke is recognized for its quality, the result of decades of dedication and careful preparation,” highlights producer Otávio Freitas Neves. With a mild climate and fertile soil, the city offers the ideal conditions for cultivation. The harvest occurs once a year, but hormonal induction techniques allow for a second crop, increasing productivity and supply.
