Ecuador has seen a significant increase in the consumption and availability of salmon in the 1990s and 2000s, with it becoming more affordable and common in supermarkets. The demand for salmon has experienced consistent double-digit growth over the last five years, despite its higher cost compared to other proteins. In 2022, Ecuador imported $6.6 million worth of salmon, marking a 12.2% increase from the previous year and an 80% increase from 2017. The majority of the salmon consumed in Ecuador is imported from Chile, with a small portion coming from the United States, the United Kingdom, Panama, and the European Union.
