The production of greens and salads in Russia is on a positive trajectory, expected to grow by 5% annually and surpass 100 thousand tons by 2030, largely due to advancements in protected ground cultivation. This growth is fueled by the introduction of new production capacities, product diversification by agricultural holdings, efforts in import substitution, and an increasing consumer demand for fresh, organic greens. Modern greenhouse technologies play a crucial role in this development. Concurrently, the demand for salads, greens, and particularly microgreens is anticipated to rise, especially within the HoReCa sector, projecting a consumption of 123.2 thousand tons by 2030, with protected soil enterprises contributing significantly to this output.
