By applying the correct practice, the shelf life can be significantly increased and food waste can be reduced. The basis for storability is selecting high-quality ginger. According to the literature, fresh ginger should be firm, hard to the touch, with a smooth and unblemished skin. Specimens that are wrinkled, soft, or have moist spots may already be starting to spoil, so their shelf life is significantly limited.
