In Kars, Turkey, geese are being fattened for slaughter to be served on winter tables, following a traditional practice. These geese, raised in the Susuz district, are fed and fattened in meadows and washed in the Susuz Stream. The meat is believed to taste better if the goose has eaten snow. The cost of the meat has increased from 250 liras to 400-500 liras due to rising costs. The geese are slaughtered after snowfall, usually in November, and then dried and sold. Some of the meat is also sent to major cities like Istanbul, Ankara, Izmir, and Bursa.
