While the monthly inflation was moderate (0.2%), several goods linked to barbecues, family dinners, and traditional December preparations showed significant increases. The report highlights increases in almost all cuts of beef, with an average monthly increase of 1.5%. Among the cuts with the highest increases are: colita cuadril (+3.5%), costilla 2ª (+2.6%), costilla 1ª (+2.0%); vacío (+3.0%), peceto (+3.3%). Increases are also seen in substitutes such as pork, which recorded the strongest rise among animal proteins, with an average increase of 4.7%. The most affected cuts were: the shank (+6.5%), leg (+5.2%), rib (+4.7%), and loin (+3.9%). Similarly, chicken cuts increased by an average of 0.6%, with the greatest variations in: thigh (+1.4%), breast (+1.4%), with options used as substitutes amid increases in beef.
