Products with a sweet protein — brazzein — will become widely available in the coming years, said EFKO's Executive Director Sergey Ivanov. Brazzein is a new food ingredient certified by the company in the EAEU territory in 2024. It is a complete analog of proteins found in wild tropical fruits that are distinguished by a very high sweetness coefficient, recreated in laboratory conditions using fermentation. EFKO associates the main potential of brazzein with the prospect of reducing the incidence of diabetes and the spread of cardiovascular diseases while maintaining the familiar sweet taste of products. According to a sociological study by EFKO, timed to the Deep Food Tech 2025 international conference, approximately every third (31%) Russian would like to give up sugar.
