A bakery in Jodhpur has seen strong demand for its gluten-free and vegan-friendly millet cakes and cookies, leading to export to the UAE, Indonesia, and South Africa. Millets have gained popularity in India and globally, with a 37.68% increase in exports over five years to $57.14 million, and reaching almost $30 million in the first six months of 2023-24. The International Year of Millets in 2023 has further boosted the popularity of diverse food preparations made from millets, with over 500 stock keeping units of millet-based food products available in the country and ready-to-eat breakfast cereal mix, biscuits, cookies, and snacks being the best-selling export items.
