Some bakeries in Istanbul have increased the price of bread from 2 TL to 2.5 TL due to rising costs such as flour, yeast, energy, and labor. The Chairman of the Bread Producers Employers' Union, Cihan Kolivar, expects a price increase of 35-40 percent in the next year and blames the situation on unlicensed bakeries that employ unregistered workers, leading to unfair competition. He also points out that the lack of oversight in Istanbul allows unlicensed bakeries to sell bread cheaper, while licensed bakeries have to adhere to regulations and pay higher costs.
