The Ministry of Food and Drug Safety distributed a microbiological safety guideline on the 21st for meat extract processed food manufacturers producing popular home meal replacement (HMR) items like beef bone soup and samgyetang. Meat extract processed foods have been steadily increasing in production as single-person households and consumers seeking convenience grow. According to the Ministry, meat extract processed food production performance has continuously increased from 164,000 tons in 2022 to 174,000 tons in 2023, and 197,000 tons last year. Over the past three years, the non-compliance rate for meat extract processed foods was approximately 2.8%, compared to the overall meat processed food non-compliance rate of 0.5%.
