Cheese is the most consumed dairy food during the pandemic period, with only 3% of Brazilians not consuming the product. According to a survey by the Brazilian Agricultural Research Corporation, milk figures the sixth position.

The greater demand for cheese was observed in other countries. “Cheese production has been increasing in recent years. Now in the quarantine period, with the greatest interest in cheeses, this did not happen only in Brazil, but around the world, there was a tendency to seek more cheeses, mainly regional and here in Brazil we are managing to meet the demand of Brazilian consumers ”, explains Embrapa's researcher.

The main rationale for the leading cheese in pole position with its passed feedstock milk to the sixth, is the search for ingredients for recipes, as during the quarantine period, consumers are going through baking at home and yet looking for snacks, which led to a higher consumption of dairy products, instead of milk itself.
