The industry has its origins in the export of Ukrainian long-tailed crab to Turkey for breeding purposes, which has since become a global leader in production. Starting with an investment of 20 mature females, the business has the potential to yield significant profits within three years, with the price per kilogram of crayfish meat reaching up to 70 euros in the West. The species are easy to maintain and require minimal feeding costs, with larger specimens fetching higher prices.
